  1. Cut avocado in half, and remove the skin and seed
  2. Chop the avocado into large chunks and add to Vitamix
  3. Add remaining ingredients to Vitamix and process until smooth, stopping to scrape the sides of the blender if needed.
  4. Pudding can be eaten immediately or stored in the refrigerator for up to 5 days.
